Pulled Pork Tacos

Another easy and delicious meal thanks to my trusty slow-cooker ;)

Here are the ingredients you’ll need for the pulled pork

  • 1/2 cup lime juice
  • 1/4 cup grapefruit juice
  • 1/4 cup water (next time I’ll use stock)
  • 2 bay leaves
  • 1 t dried oreano
  • 1/2 t salt
  • 1/2 t cumin
  • 1/4 black pepper
  • 3 loves garlic, minced
  • 1 3-pound boneless pork shoulder roast (I used pork loin) - trim extra fat off
  • 1 large onion, sliced
  1. In a small bowl combine everything except the pork and onion
  2. Pierce meat in several places. Place in resealable plastic bag set in a shallow dish. Pour marinade over meat and seal bag. Marinate in the fridge for 6-24 hours, turning bag occasionally
  3. In cooker place onion. Add meat and marinade. Cover and cook on low for 10-12 hours or on high for 5-6.
  4. Remove meat and onion from cooker, reserving juices. Using two forks, pull meat apart into shreds. Remove bay leaves. Skim fat from juices and season to taste. Add as much or as little juice as you want to the pulled pork. I saved the extra liquid for cooking other things later in the week.
  5. Prepare tacos as you like. I used soft corn tortillas, salsa, green onion, and cheddar cheese. Yummy!
