This is the dinner I made a couple nights ago. It’s plain ol’ rice, mango slaw and Thai chicken wings.
I need to work on my food presentation skills. This was very tasty. I’m thinking of making the slaw for an upcoming baby shower.
Both recipes were inspired from these posts here and here. As usual, some modifications:
For the chickenAs you can see, I used wings instead
For the slawA few substitutions:
iceberg lettuce instead of savoy cabbage
added two carrots and two ribs of celery
substituted cilantro for mint because I had 1/2 a bunch left from the chicken recipe and I like to use that stuff up ;) I’m sure mint would also be great
Also, I had the slaw over the next two days in my lunches and I thought it tasted even better later, I think because the mango flavor gets a chance to really come out.
